एक्रिलामाइड (Acrylamide) या 'एक्रिल एमाइड' (acrylic amide) एक रासायनिक यौगिक है जिसका रासायनिक सूत्र C3H5NO. इसका IUPAC नाम prop-2-enamide है। यह गंधहीन क्रिस्टलीय पदार्थ है जो जल, एथेनॉल, ईथर और क्लोरोफॉर्म में घुलनशील है।


एक्रिलामाइड तमाम तरह के भोजनों में उनके पकाए जाने के दौरान प्राकृतिक रूप से उत्‍पन्‍न होता है जिसमें कॉफी, चॉकलेट, बादाम, फ्रेंच फ्राइज़, क्रैकर्स, आलू के चिप्‍स, अनाज, ब्रेड और यहां तक कि कुछ फल और सब्जियां भी शामिल हैं। एक्रिलामाइड भोजन में तब से मौजूद है जब से इंसानों ने भोजन पकाना शुरू किया, किन्‍तु अप्रैल 2002 तक, जब स्‍वीडिश वैज्ञानिकों के एक समूह ने शोध प्रस्‍तुत किया जिसमें कुछ बेक्‍ड एवं फ्राइड फूड्स में यौगिक के दर्शनीय स्‍तरों का पता लगाया गया था, भोजन में इसके होने की जानकारी नहीं थी। स्‍वीडिश अध्‍ययन से पूर्व, एक्रिलामाइड के लिए भोजन का विश्‍लेषण नहीं किया गया क्‍योंकि इसे न तो संघटक के रूप में प्रयोग किया जाता था और न ही भोजन के अवयव के रूप में इसकी जानकारी थी।
